These Mini Cheesecakes are easy to make and so delicious! Their individual size makes them perfect to take to a party or potluck.

I use vanilla wafers for the crust and like to top them with pie filling cherries or fresh fruit like blueberries, strawberries, raspberries, peaches, or blackberries.

Other topping options…a swirl of chocolate sauce or caramel. And don’t forget to leave a few mini cheesecakes free of toppings for the cheesecake purists in the group.

If you’re making these ahead, I recommend adding the toppings just before serving. This has worked well for me in the past, especially when using fresh fruit and berries.

Here's What You'll Need

2 regular muffin/cupcake baking pans
18 muffin/cupcake liners (foil recommended)
Mixer or hand mixer
Large mixing bowl

INGREDIENTS

1 lb. cream cheese (two 8 oz. packages)
3/4 cup sugar
2 eggs
1 tablespoon lemon juice
1 teaspoon vanilla extract
18 vanilla wafers
Your choice of fruit pie filling or other toppings

Directions

1. Preheat oven to 350-degrees.
2. Add all of the ingredients to the mixing bowl. I recommend letting the ingredient come to room temperature before mixing to avoid lumps.

3. Use a mixer or hand mixer and whip for about 4-minutes or until light and fluffy.
4. Line the cupcake baking pans with cupcake liners.
5. Put one vanilla wafer in each cupcake liner.

6. Fill each cupcake liner with the cheesecake mixture. Fill about 3/4 full to leave room for toppings.
7. Bake for 20-minutes. They should set up and feel almost like jello to the touch when done.
8. Let cool completely before adding toppings and refrigerate before serving.
