Chocolate Chip Cheesecake Bars

These chocolate chip cheesecake bars combine chewy cookie dough and a rich, creamy cheesecake layer in one easy dessert. Made with cookie mix and simple ingredients, they’re perfect for parties, cookie exchanges, or a quick homemade treat.

I like to use a package of Betty Crocker cookie mix for this recipe because I usually have it in my pantry. You can also use a premade roll of cookie dough, or make your favorite homemade chocolate chip cookie dough.

Here's What You'll Need

9″ x 9″ baking pan
Mixing bowls
A handmixer (optional)

INGREDIENTS

Chocolate Chip Cookie Dough that yields 24 small cookies (premade from a mix, roll refrigerated cookie dough, or homemade)
Cheese Cake Batter:
1 egg
3/4 cup sugar
1 package cream cheese (8 ounces) (low fat not recommended)

Directions

1. Preheat the oven to 350°F.

2. Make your chocolate cookie dough according to the package directions if using a store-bought mix and set aside.

3. Mix the egg, sugar, and cream cheese until smooth.

4. Spread 1/2 of the chocolate chip cookie dough evenly across the bottom of a 9-inch greased or parchment lined baking pan.

5. Pour the cheesecake mixture over the cookie layer and spread out evenly.

6. Form the rest of the chocolate cookie dough into thin cookie pancakes and place them over the cheesecake layer.

7. Bake for about 45-minutes until lightly golden brown on top. Let cool and refrigerate before cutting into bars for even cutting. Store in an airtight container in the refrigerator for up to 7-days.
