Chocolate Whoopie Pies with Marshmallow Frosting

These chocolate whoopie pies are so yummy. I’m making them for Valentine’s Day but honestly, they’re a delicious dessert any time of the year.

My mom used to make them when I was a kid and I remember feeling like it was a big ordeal to bake and make the filling. I’m sure it was because I was impatient for them to be done so I could eat them!

I have a little more patience now and these sandwich cookies are so much easier to make than I remember.

I did change something in this old family recipe and that was the filling. My mom used shortening to make her filling. I’m not sure they even sell that anymore but I remember it not having any taste!

Taste is important and my adult tastebuds demand better so I’ve opted for a filling made with marshmallow creme. If you have trouble finding marshmallow creme, try the baking aisle. It should be near the bags of marshmallows and sugar.

This filling is perfect for whoopie pies because it has the right amount of sweetness and it’s very light and fluffy. I go into all the details below, so gather up your ingredients and let’s make a batch of delicious Chocolate Whoopie Pies.

Chocolate Whoopie Pies with Marshmallow Frosting

Here's What You'll Need

Cookie Sheets & a Cooling Rack (optional)
Parchment Paper
A large mixing bowl
A hand mixer or stand mixer

INGREDIENTS

1/2 cup butter softened (1 stick)
1 egg
1 teaspoon vanilla extract
1 cup sugar
1 cup milk
1-3/4 cups all purpose flour
1/2 cup cocoa powder (unsweetened)
3/4 teaspoon baking soda
3/4 teaspoon baking powder
1/4 teaspoon salt
Frosting: 1/2 cup butter softened (1 stick), 1 cup of marshmallow creme, 1 cup powdered sugar, 1 teaspoon vanilla extract, and 2 tablespoon milk.

Directions

1. Preheat oven to 350-degrees.

2. Beat the sugar, egg, vanilla extract and softened butter until blended in a large mixing bowl.

3. Next add in the milk, flour, salt, cocoa powder, baking soda and baking powder.
4. Combine all of the ingredients until well blended.

5. Drop the batter onto parchment lined cookie sheets by the large spoonful with plenty of space between. The cookies will spread in the oven.

6. Bake about 10-12-minutes. The centers should spring back when you touch them. Then let them cool completely.

7. While you’re waiting for the cookies to cool, prepare the frosting by whipping together the softened butter, marshmallow creme, vanilla extract, powdered sugar and milk.

8. Make whoopie pies by adding a dollop of filling to a cookie and topping with another cookie. Serve and enjoy!
