This Healthy Crock-Pot Vegetable Soup is a warm hearty soup that is infused with flavor.
I love using a crockpot to make soup because you can set it and forget it and the longer cooking time brings out maximum flavor.
There are just a few spices used in this soup but the real key to adding flavor to a vegetable soup is to add a little acid and the right amount of salt.
I always add a tablespoon of vinegar at the end and taste to make sure I’ve added just the right amount of salt. You can also use seasoned salt if you have it.
You can store this soup for up to five days in the refrigerator to have for lunch or dinner throughout the week.

UPDATE: I’ve made this soup quite a bit this winter. Lately, I’ve been adding a can of organic pureed pumpkin to the mix. The pumpkin thickens the soup and it tastes great! I have also been adding one large diced potato to make the soup more hearty (plus my kids like that). Feel free to add any veggies you have on hand.
