This hobo dinner is a healthy meal that you can easily cook on the grill or over an open campfire.

I’ve been making quite a few Sausage and Veggie Foil Packs lately just because there is little to no clean-up after all of the prep is done.

I just stick them in the oven and dinner is ready in about 45-minutes. We like to eat them straight out of the foil which means no dishes to clean. Even the baking sheets are still clean after baking.

Use any sausage you like. My family likes Italian Sausage, especially this brand from Aldi. (Fyi: I’m not promoting Aldi just sharing what I used in this recipe 🙂

This easy meal idea is great for busy evenings. To save even more time, you can make packets ahead. Just prep them in the morning (or the day before), refrigerate, and bake later.

Here's What You'll Need

2 baking sheets
6 sheets of aluminum foil (about 15″ x 12″ size)
A large mixing bowl

INGREDIENTS

4 Italian sausage links
1 (24 oz. bag) of 2 Bite Potatoes (or 3-4 russet potatoes)
1 stoplight pepper
1 sweet onion
2 cups frozen green beans
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried basil
1 teaspoon salt
1/4 teaspoon ground black pepper

Directions

1. Preheat oven to 400-degrees.

2. Cut 2 bite potatoes in half (or cut russet potatoes into 1-inch chunks). Cut pepper and onion into 1-inch chunks and sausage links into slices.
3. Put all ingredients: potatoes, peppers, onions, frozen green beans, garlic powder, onion powder, paprika, basil, salt and pepper into a large mixing bowl and combine.

4. Spoon about two cups of the sausage mixture onto each foil sheet.

5. Fold the foil the long way and seal up the ends as shown. (Note: It’s important to seal the foil packs well so that the heat/steam cannot escape.)
6. Bake until fully cooked (about 45-minutes in the oven). I usually carefully (steam is hot!) open one of the foil packs and use a fork to check the potatoes for doneness.
7. Eat and enjoy. Refrigerate any leftovers.
