I make this 3-Ingredient Salsa Chicken dish quite often. It’s super easy and everyone in my family loves it because the chicken always comes out tender and flavorful.

This is one of my favorite go-to dinner meals that I like to make on busy evenings. And, I almost always have chicken, salsa, and cheese on hand.

Another bonus is that there’s very little prep involved and you don’t need to marinate the chicken ahead of time.

I’ve had this recipe for a long time and I think the original recipe floating around in our family recipe box called for 8-ounces of cheese. That always seemed like too much so I cut it to 4-ounces. I also use a mild chunky salsa because my boys don’t like it too spicy but you could use a medium or hot salsa if you prefer.

Although this 3-Ingredient Salsa Chicken dish is really a meal in itself, I usually serve it with a side of mashed potatoes. Weird I know, but it’s delicious with mashed potatoes! If we’re really busy, I just serve it with a salad, corn on the cob, or green beans. Of course, rice and refried beans are great sides too!

Here's What You'll Need

A pyrex oven-safe baking dish

INGREDIENTS

4 boneless skinless chicken breast halves
16 oz. jar of salsa
4 oz. shredded cheddar cheese

Directions

1. Pre-heat oven to 350-degrees.
2. Place the chicken breasts in a baking dish (uncovered) and sprinkle with a little salt and pepper.
3. Bake for 20-minutes at 350-degrees.
4. After 20-minutes of baking, remove from the oven and spread a jar of salsa over the chicken. Be sure to completely cover the chicken with salsa. This keeps the chicken moist while baking.
5. Sprinkle the shredded cheese over the salsa and put the baking dish back in the oven.
6. Bake for 15-20-minutes more until the chicken is thoroughly cooked (no longer pink in the middle).
7. Let rest for 5-minutes, then serve.
