According to this Healthline article, carrot juice is low in calories and carbs, and chocked full of vitamin A, vitamin C, and Vitamin K. If you’re looking to improve your eyesight and boost your overall health, try adding carrot juice to your daily routine.

This carrot juice recipe makes about four, six-ounce glasses of juice. Adjust the number of fruits and vegetables to make more or less.

Why Make Fresh Juice?

Fresh juice has been a good option for our family because we sometimes struggle to get enough fruits and vegetables into our diet. We add juice to our diet but we also eat fruit and veggies with meals.

Another reason to make fresh juice is taste. Before I bought a juicer, I would buy store-bought juice and stop at juice bars. I tried to like them but most were flavorless–sometimes awful and overpriced.

Tip: You can make almost any fresh juice taste great with the right balance of apple and lemon.

Do You Have to Buy Organic Fruits and Vegetable To Make Fresh Juice?

There are a lot of juice enthusiasts who swear that you should only juice organic fruit and vegetables. Honestly, I buy what is on sale!

That said, I do try to take into consideration the Dirty Dozen list when buying fresh produce. The fruits and vegetables that top this list are considered to be highly coated with pesticides — yuck!

I know that apples and greens always make the list so try to buy them in the organic section. Here's What You'll Need

A juicer
A cutting board
A pairing knife

INGREDIENTS

6-7 carrots
4-5 celery ribs
1 cucumber (or 1/2 of an English cucumber)
1 granny smith apple (or other tart to slightly tart apple)
1 lemon

Directions

1. Wash fruit and vegetables thoroughly.

2. Cut celery ribs from the stalk and apple into chunks as needed to fit into your juicer’s feeding tube. Remove the outer rind from the lemon and the skin from the cucumber as needed. I used 1/2 of an English cucumber and left the skin on.

3. Feed into the juicer feeding tube finishing with the cucumber.

4. Serve immediately or store in an air tight container in the refrigerator for up to 24 hours. For best taste, refrigerator for no longer than 4 hours.
