One Skillet Beef Stroganoff is a family favorite that I make for dinner quite often. I’ve been making this one-skillet main dish as long as my husband and I have been married.

This hearty meal can be made with just a few ingredients from your fridge and pantry. This is also a really quick meal to make on those busy weeknights when you want to put something healthy on the table but you’re short on time!

The only thing I don’t put in this dish, that is traditional in a stroganoff, are mushrooms. No one, except me in our house, likes mushrooms. Feel free to add a can of drained/sliced mushrooms to the mix if you love them!

I’ve also found a few shortcuts to save time and money but keep all the flavor. To cut prep time I like to buy peppers and onions when they go on sale, dice them up and freeze them. It’s a great time-saver on those hectic nights or when I just don’t feel like cutting up veggies. And, frozen pepper and onions cook up faster too.

One Skillet Beef Stroganoff will easily feed a family of four and we usually have leftovers for the next day.

Here's What You'll Need

A deep 12-inch skillet with a lid

INGREDIENTS

1 pound ground beef
8 ounces wide egg noodles
1 green or red bell pepper (chopped)
1 sweet/Vidalia onion (chopped)
1 (14 ounce can) diced tomatoes (undrained)
1 tablespoon sugar
2 tablespoons chili powder
2 cups of water
1 cup sour cream
salt and pepper to taste

Directions

1. Begin by browning the ground beef.
2. Add the chopped onions, peppers, diced tomatoes, water, sugar, salt, chili powder and noodles to the skillet and bring to a boil.
3. Reduce the heat and cover with a lid and simmer on for 15-20 minutes or until noodles are cooked. Note: Lift the lid occasionally and stir to ensure the noodles cook evenly. Add more water if needed in ¼ cup increments if needed.
4. When the noodles are fully cooked remove from heat and stir in the sour cream.
5. Serve immediately.
