This chicken Fried Rice dish is so yummy and one of my go-to meals to make on busy nights.
Chicken Fried Rice is a one-skillet meal that can be made with just a handful of ingredients that you probably have in your refrigerator right now. I add chicken to the dish but honestly, it would be just as delicious without it.
This is my version of fried rice and it’s also a simplified version but with all the flavor! I would have to say that I make this dish for our family of four every couple of weeks. It’s great because we usually have a bowl or two as leftovers to warm up for lunch the next day.
If you do have a little extra time, I do have one recommendation and that’s to make the rice ahead. You’ll not only have some of the prep done before dinner but the consistency of the rice much better if you make it a day ahead (even a couple of hours ahead), and let it get cold in the refrigerator. Cold rice is less likely to be sticky and has a more light and fluffy texture.
For vegetables, I use frozen peas, and carrots, and diced onion. Feel free to add bean sprouts, broccoli florets, snow peas, or other veggies you have on hand. Just add cooking time accordingly if you have fresh veggies or heartier veggies like broccoli or root vegetables.
The seasonings in this dish are simple but flavorful with just onion and soy sauce. You can serve this dish with egg rolls and sweet and sour sauce.
